*Ubriacone or drunken cheese a semi soft cows milk cheese aged in wine and wrapped in grape leaves.

*Pecorino Foglie di Noci a semi hard sheep's milk artisanal cheese aged in caves while wrapped in walnut leaves to impart a sweet, nutty and intense flavor.

*Sottocenere al Tartufo in an elegant truffle cheese aged in ashes per Venetian tradition yet with a modern twist. Smooth, silky & irresistible. It is made with cow's milk, black truffles, ashed rind in cinnamon, nutmeg, licorice, fennel, clove, anise and truffle oil.

*Casatica di bufala a buffalo milk cheese soft-ripened, with a creamy interior and a mild and delicate milky sweetness.

*Piave is dense textured, slightly sweet with an intense full bodied flavor.
